Need a last minute side dish for Cinco de Mayo?
Here’s an easy recipe with ingredients that are probably sitting in your kitchen right this very minute. Canned black beans? Cumin? Lime juice? Check. Check. Check.
Better still, it’s a healthy, one-pot dish.
Cumin and garlic give these beans a rich, satisfying flavor, while the lime offers a brightness to the dish.
Surprisingly, this is a recipe that I can get everyone in my family to eat. Even the baby likes to pick them up off her highchair tray and pop them in her mouth.
Zesty Cumin Lime Black Beans
- 1 can black beans, rinsed and drained
- 1/2 cup chicken broth
- 1 teaspoon minced garlic
- 1/2 teaspoon cumin
- 1 Tablespoon lime juice
- Dash of kosher salt
Open the can of black beans, rinse and drain. Add beans, broth, garlic, cumin and lime juice in a small saucepan. Heat over low to medium heat about 10 minutes, stirring occasionally. Beans will soften and have an ‘opened’ look. Most of the juice in the dish will have cooked off. Season to taste with kosher salt. Then post a photo of the oh-so-photogenic black beans on your blog 😉
