I’m always looking for recipes I can make with my daughters.
They need to be quick, easy and somewhat healthy.
This one has become the most-requested because of its deliciousness and its simplicity.
The recipe has 4, maybe 5 ingredients (I add a tablespoon of flaxseed meal that the original recipe doesn’t call for). It takes 5 minutes to pull together.
You’ll just need a box of spiced cake mix, a can of pumpkin puree, 1 egg and chocolate chips.
And the muffins come out so beautifully. They’re filling, and just a touch sweet. And don’t tell my kids, but, it sneaks in a serving of veggies in the first meal of the day.
When I asked my big girl what she wanted to make her Dad for Father’s Day breakfast, her answer was immediate: Pumpkin Chocolate Chip Muffins.

Recipe notes: Though the recipe calls for 1 cup of chocolate, I cut the chocolate chips to 1/2-3/4 cups and find it’s still plenty chocolate-y.
